When Toph said she doesn't worry about appearances, She was telling this to Katara after they left the Fancy Lady Day Spa. Toph said this because 3 rich Earth Kingdom girls said that she looked like one of their pet poodlemonkeys. In the Avatar world, the animals are hybrids of two animals together like a platypus-bear or lion-turtle. Great Work on Toph!
