There's no anime, it would be way too much work x_x but I believe is working on a visual novel game. The screenshots were created by many of the talented fans out there ^^
AU stands for Alternate Universe, since this is not part of the game or original story line, it's called AU.
Dark Link or Demon Link (same idea, people just use call him differently) happens due to Slave!Link having been in the demon realm for a long time. The dark energy from the realm starts to affect him and a darker side emerges. Some fans think of him as a separate entity from Link and some take it as a subconscious that takes over his body at certain times, like at night.
