I cant seem to set a good setting for freezing pictures, like people in mid air and water droplets

Do you mean settings on your camera? If so you just need a high shutter speed say around 1/80 at the slowest for people jumping and stuff and the lowest f stop your lens will give you. I guess play around and you'll get a fell for it.
