I was thinking of doing this before you asked, as I've been asked quite often on how I go about processing my shots.
As far as the colours go, I like to keep them as natural as possible. There are a lot of settings that will affect my final clours but in a nutshell, I always shoot in RAW, using the Adobe RGB colour space, and the Faithful Picture Style (this is with my Canon). Dealing with colour spaces is a little complicated though, and I'd suggest reading up on that specifically. In the processing I will always add a levels, contrast, and saturation adjustment layer at the end. That's as far as it goes for the colours, if there's anything else you would like to know, feel free to ask.
