I've been wanting to know how to make them, and hoping to take a costume making class and learn basic sewing.. in order to try to make cosplay and plushies...

Probably the best way to get started would be to try to find a basic soft doll pattern either online or at a craft store...then alter it to make it your own. You might even be able to find a tutorial here on dA. (I'm afraid the tutorial that I used to learn the basics isn't available anymore). For clothes, I just looked at full-size clothing patterns to see how the pieces go together.
If you find a class, that would be a huge help for you. ^_^
