I guess an easy way of looking at it is putting every AU into 3 categories: "Undertale but everyone's switched around", "Undertale but with characters from (other property)", and "Undertale but everyone acts like (character) save for (character) themselves." There's more ways to make an AU but those 3 seem to work the best.
