Well...sometimes neither! I design my jewelry with 3D modeling software and get it made by 3D printing services like Shapeways. The brass, silver, and bronze materials are 3D printed in wax, and then a mold is made from that and they cast it...but in the stainless steel materials, they sinter stainless steel powder, they they have a hardening process to give the powder strength. You can get it plain like that or plated in gold or bronze. Plastic pieces come straight out of the printer with no post-processing of any kind.
