I tried looking through to make sure you haven't done these yet. Anyway, these are some favorites.
Greek Lamia (upper half human, lower half snake, usually female, popular in anime and video games)
Selkie (not sure how you would animate this one, but I've always really liked it. Seal/human therianthrope, mythological stories often feature men stealing their sealskins, preventing them from turning back into seals. Would punish men who killed seals.
I don't think I saw troll yet. The norse mythological one, not the little figures with crazy hair.

Black dog (ghost dog, Brittish folklore I think)
Spring-heeled Jack. Since you've been doing odd ones, this guy is another favorite. From Victorian England, alternately described as demonic, gentlemanly, or wearing a helmet and tight fitting oilskin beneath his cloak. He often was described as having metallic claws, fiery glowing eyes and the ability to breathe and/or throw fire. He's named for his tendency to make incredible leaps.
