I have trouble imagining older Twilight as turning into a Purple Celestia... so here's my take.

She stays in touch with Sunset via the Journal, and either via Sunset or possibly other help, gets some help with her tendency to anxiety and need for control and perfectionism, allowing her to relax and enjoy her books again. This results in occasions where she's basically being crammed into formal wear last minute, while still flipping book pages and muttering "MM-hmm" while being breifed on the occasion. Miraculously, almost all of the time she manages to retain the information she's being given while in this deeply distracted looking state, and even who was talking to her, although she may forget that some of her replies and thoughts were not, in fact, out loud. She also sometimes forgets to eat, fortunately she's got friends on hand to make sure snacks and drinks are within easy reach, and she consumes them without thinking about it too much. Unless she spills tea on a particularly good book.
