Fair to say that a part of you have seen that coming for sure! XD I mean, it was a low-handing, already sliced and seedless watermelon, actually.

The thing is: As tough as Undyne is, but at least she would grow big eyes at the first sight of one of these Blasters, especially threatening her and making clear its summoner is not actually playing around, being Mister smiling-all-over for once. Afterwards she might fall into an excited rush, though, because it's still Undyne. XD
Also... in my head-canon I don't think Undyne is aware that Sans has been the king's Royal Judge or if she knew, she is aware of Sans' full potential and powers.
