Mmm, I adore zucchini fritters. My grandma would always make them. The recipe is pretty much exactly the same, but we'd use egg in it, too. They're so easy to make!

I think the original recipe calls for eggs to be used too but this was part of my under 300 calories blog post so I had to opt them out. So easy and they taste sooo goood!

I love Zucchini but I've never had Z fritters. I have had it breaded and fried but it's much better steamed or boiled then liberally dosed with butter IMHO.
