This is a piece of concept art commissioned by for his recently completed short story “The Climb” Which you can read for yourself here: canine-lupus.deviantart.com/ar… . Did a few other Illustrations for the story as well so make sure to go check it out if you haven't already. ^_^ This was done as a bit of a study for use in my own work as well. The final version used in the actual story was a little different than the one here. The version used in the illustrations had a longer wrist/ more feral look. This design here is more akin to the style of hands used in past and present Anthropomorphic Horse characters of my own creation found in my gallery.
Now time for some technical discussion on this concept itself for you scholarly folk reading this.
I wanted to design a hand which would incorporate the major characteristics of a horses hoof, leaning more towards animal than human, but would still function like its human counterpart. I wanted it to be unique from my other hoofed species too. Looking back at the prehistoric ancestors of the horse for inspiration I settled upon 4 digits with one large central digit which would be the major defining horse feature and also function well for quadrupedal movement becoming the weight bearing digit. I was debating upon removing the pointer finger, but ended up retaining it to allow for more precise item manipulation, which is an important thing to consider when designing any sort of intelligent creature. A three digit hand would have been the most evolutionary accurate way to go though. Studying and figuring out what works and what doesn't is half the fun of any sort of design process.^_^
This sheet itself shows the grasping capability of the hand in the top image. The center image is a hairless version showing off the form and musculature of the hand and arm. The bottom image shows a view of the top of the hand.

Yes, I think with perissodactyls (well, more specifically, horses and rhinos) it is always a really hard call between going anatomically accurate and only including digits II, III, and IV (based on their evolutionary history) or actually allowing them to grasp things and giving them Digit I instead of Digit II. I think your compromise in including digits I and II makes sense. I tend to also include digit V in my compromise, but that is largely because I am weak and struggle to ween myself off of five digit hands for anthropomorphic animals in my own work.

That's quite the sizable middle finger there! Personally, I prefer to just go with five hoof-tipped fingers.

Though interesting, the thumb is not a practical approach to this at all. It makes no sense to have a full infused hoof with three awkward appendages. Two on the sides would have been fine in corresponding to the early horse mechanics. The rest in just purely imagination related.
Should have just split the whole hoof into digits and used 4 to stand on with a thumb at the back, that way the walking would not be hindered and the grasping ability is semi realistic. Like this: vignette3.wikia.nocookie.net/j…
