Well, how do we KNOW she really raises the sun every day?
What if - bear with me here - the rise and setting of the sun is controlled by entirely natural phenomena that exist and function with or without assistance? Phenomena that might be altered with exceptional magic, but not controlled by it?
I mean, really, did they just not have sunlight before Celestia was around? Crazy.

I wonder if there's an entire class of ponies dedicated to the theory of heliocentrism, viewed by the rest of pony society as insane cultists and dangerous outcasts who insist on attributing the rise and fall of the sun and moon to natural forces, and denounce the royal family for taking credit for the basic workings of the universe.

Hearts Warming Eve shows that before Celestia / Luna, large groups of unicorns would raise the sun and the moon. Also, whenever Luna goes Nightmare, she puts the moon up and doesn't take it down, so its perpetual night. Also, Discord in s2 was moving the sun and moon errantly himself.
So yeah, Celestia moves the sun. But so could a classroom of students from the School for Gifted Unicorns.

Personally, I've accepted Luna as my chosen princess.
