Ingredients
- Sushi rice 1-2 cups
- Salmon (for sashimi) about 150g
- Avocado or Cucumber
- Cream cheese block
- Nori seaweed sheet

Directions
1. Make 2 cups of sushi rice. Slice the salmon into thin slices, and cut the cucumber and cream cheese into long, thin strips.
2. Place a small bowl of sushi rice on plastic wrap and spread it out to the size of the nori sheet. Center 2 lines of salmon, leaving no gaps.
3. Cover with a second sheet of plastic wrap or sushi mat on top and carefully flip it so the salmon is facing down on the bottom.
4. Remove the wrap from the top, lay a sheet of nori seaweed cut in half on the rice, and add the cucumber,salmon and cream cheese in the center of the seaweed.
5. Roll it up!. After rolling, give it a tight squeeze through the plastic wrap/sushi mat, and then remove the plastic wrap/sushi mat.
6. Flip the wrapped edge downwards then cut the rolls, wiping the knife with a wet cloth between each cut. Serve with optional soy sauce and enjoy!
