i always always always shoot RAW, then if i want to go b&w i can mess with the channel mixer and get a lot better control on contrast and such than just in camera b&w, or just doing the basic desaturate option in ps.

Fantastic portrait, I love the lighting and the mood! 
When it comes to using black and white, I highly prefer to use Photoshop to desaturate, because I can fiddle with the RGB settings in the Channel Mixer, and thus adjust it more precisely to my preferences. Also, if you decide that you don't like the black and white as much as you thought you would, you can always change it back.

I've gotten a lot of similar notes from other photographers. It's good to know! That was my thinking, but I wasn't sure if there was an image quality benefit to shooting it that way. I think you're right though, better to convert it in photoshop and have both versions!
