Lightsabers form pure energy blades the sear a wound shut almost immediately after making it. Therefore, a lightsaber never draws blood, or at least not to this amount.

With some exceptions indeed. Not all things seen in the movies are to be seen as the norm. Otherwise, they wouldn't be very good stories, would they? And the amount of blood spilled greatly differs as well. A few drops in the movies compared to a practical oil spill here.

Which is why all Star Wars stories, including Lucas' own work, has some artistic license. I think the point of all the blood here is to emphasize the violence and plot twist of the event, rather than making a technical statement.
