On a technical note, I was wondering, do you paint in colour or in BnW/Sepia and then colour it?

Yes. I mean - not always, but I often do when I work on a quite complex sketch composition-wise. Starting with a rather monochromatic color scheme (greyscale or sepia or other) allows me to focus on composition, volumes, lights and shadows without having to worry about HUE and skin tones.
I basically keep painting in greyscale until I reach a pretty decent draft, then I change the HUE or add some gradient map to define a color scheme. Then I keep adding colors manually as I proceed to paint the details.
