Took me about a month. But I don't have much free time. It's entirely possible to make a sculpt in a day, but anything with quality in mind will take (by my estimations) about a week if you are in school/uni/etc. But everyone is different and work with different speed.
I recommend you to take a peek at #PonySculptors  and ask around there. They also have a skype group, if you want to learn how to sculpt.
