I think Gregor is the kind of boy who doesn't easily freak out. I mean any other kid who sees a giant cockroach would've bolted or screamed, but he actually managed to keep his cool and even speak to it. Atleast, the way I've interpreted Gregor's personality is that he's a brave kid. He wouldn't freak out that much on situations like this, instead he would keep his cool and be smart about what he should do next, one of his first instincts would be to make sure if his little sister is ok or if a real danger arises, well, his "rager mode" is activated.
Plus the book didn't even mention or told no hints of him freaking out. So my interpretation is that he was surprised, a bit scared, but mostly curious and concerned. Also slightly thinking it was all a dream. And all of those feelings are happening inside him. The only ones shown physically, I think, are confusion and concern.
One of the things that I forgot on this one though is him clawing for something to hold on to. hehe
