Same could be said about a lot of Sonic X episodes.  She started off pretty much perfect, but she got more and more annoying over time.  By the time of the Metarex, I couldn't stand looking at her.

Yeah.  I'm not happy with how Sonic X handled anybody, but Amy's portrayal is probably the worst.  Even disregarding things like "most accurate and least accurate portrayals," she's just not pleasant to watch.  And it's not helped by the fact that she was in every episode past a certain point.

When you look back on games like SA1 and SA2 (it's sad that the fanbase has to fall back primarily on two games for practically every conversation), I can see promise in Amy's character and she's oddly unique in how she couldn't really fight, but didn't let it stop her from doing the right thing.  To that end, it's a shame that her crush on Sonic far eclipsed every other trait she ever had and misguided fans and writers alike into treating her like a demented fangirl rather than a decent person who just happened to have a crush.

I can see why people like Amy, but I'd be lying if I said I didn't think they were clinging to the older games and/or inflating her positive traits more than they ever really were.  Although I don't currently read the Archie Comics, I do like how characters actually get to have deeper personalities than just "fangirl," "Sonic's friend," "hot head," etc and we get to see them do more than just save the world or get captured while trying to save the world.  I wish the Boom games got to do what they stated they were gonna do and not what they wound up doing; it sounded like they really wanted to inject some life back into the characters.
