Well, unfortunately, the person who this work was done for, their OC *isn't* a minotaur or centaur.
And from a biological standpoint, a centaur is equally anatomically impossible.

Why would a centaur be as impossible?
Since a horsehead is bent up the same way as the humanoid part of a centaur the muscles required for holding and stabilizing are already there.
But replace a small downbent panthers head with an entire human torso would be just too heavy for a lightweight agile creature.
Horses are bred to carry a rider or baggage while wildcats arent at all.

That's true, BUT... I'm referring more to the internal organs. One theory says it has two of everything... a human digestive system to process an omnivore's diet, AND an equine digestive system to process grains and grasses. Two hearts. Two sets of lungs and synchronized diaphragms (there are biological reasons that won't work.) In some variants, two sets of genitals (a human set between its forward legs and a horse set in the usual location.)
The most plausible theory I've heard is that the upper body contains only a hypertrophied (that means "oversized") heart and lungs, and everything else is in the lower torso, along with a secondary heart and a nerve cluster at the base of the spine to coordinate the beating of the two hearts. Only one herbivorous digestive system, with the stomach close to the front of the horse half, and the intestines, kidneys, liver, etc., behind that. You'd also have a face with a hint of a muzzle, and a mouth full of grinding teeth (for chewing hay and grass), and enlarged nostrils and throat... because otherwise it wouldn't matter if you DID have four lungs, you'd never be able to take in enough air to fill them. And, of course, only a single set of horse genitalia between the hind legs, where it belongs.
A third theory puts additional mouths in the centaur's HOOVES so it can continue to graze while the human half sleeps, but I think that's every bit as ridiculous (and implausible, especially if you have only one stomach) as it sounds. Five ways into the stomach, only one way out?
So, yeah... centaurs are *very* implausible from the standpoint of internal anatomy. At least other animal hybrids, like satyrs, fauns, and minotaurs are basically bipedal and don't need nearly as much modification to make them plausible (for satyrs and fauns, just changes in leg structure and diet. Minotaurs as described in Greek myth would require major changes in skull structure... they have the head of a bull, after all.)

Lungs would be the biggest problem as breathing is quite important for any animal.
grinding teeth wouldnt be required after all because processed food packs way more energy into smaller portions, thats how humans managed to not eat constantly but only 2 to 3 times a day while maintaining full body and brainfunction.
So a stomach a little smaller than a normal horsestomach with some changed details to digest processed food would be just fine.
Two hearts also sound like nonsense to me. A giraffe manages just fine with one heart so that should work for a centaur too.
Two genitals sound absurd too ... but lets not talk about centaur sex here. please. I dont want such images in my head. xD
Sure you cant just sew a horse and a human together but if you find a solution for the breathing, e.g. letting the centaur breathe through something like a second nose located at the human belly, it would work i think.
But a good point. I didnt even think about organs at all. I just thought about bone and musclestructure.
After all every fourlegged humanoid is nonsense at some point because the two seperate creatures are way better than combined.
The organs not mentioned are more problematic ... the human brain and eyes would need several changes to withstand the higher bloodpressure required.
So if were fixing all this up to create a functionin centaur we should really do something about the bones too because horses still get shot after breaking a leg because they heal terrible. Not very good fighter like its always displayed in movies ...

"A stomach a little smaller than a normal horse stomach"... that's assuming you're talking about a modern world, not a fantasy world that doesn't have processed food, but you have a good point.
"I didn't even think about organs at all"... I sort of figured you'd catch on to that. The internal arrangement and how you adjust it for two different biologies would be an issue for *any* type of centaur... feline, canine, equine, whatever.

Leg structure is a problem that would affect equine centaurs moreso than other types; from my understanding, the problem is because when horses run, the bones have to withstand a *lot* of force, and 65% of their weight rests on their front legs. The unequal weight distribution would be even worse in equine centaurs, since they'd have the entire upper body to support. Horses also can't lie down the entire time while they recuperate; they're designed to stand most of the time, even when they sleep. Which all means that while healing a broken leg, a horse (or equine centaur) would have to be supported in a sling. BUT, slings can be uncomfortable and lead to serious gastrointestinal problems. If a sling is used for too long, the healed leg can't bear the horse's weight properly and laminitis (an inflammatory disease of the material connecting the hoof to the leg bone, which can lead to their separation) could still develop.
Oh, an interesting side-note, you may be wondering why I kept saying "equine centaur"... "Aren't ALL centaurs equine?" Not necessarily. "Centaur" literally translates as "sure-footed". It does not necessarily mean an equine body (although all centaurs depicted in Greek mythology are equine). So even if their lower body is feline, canine, etc., they're still a centaur.

"Even in a fantasy setting there is bread and cooked meat"... True. For some reason I was actually thinking "processed food" but wrote "prepared food". That's quite a difference. In a fantasy setting, you can't just nip down to the corner store and pick up a can of spaghetti & meatballs, but you *can* go down to the inn and buy a side of roast meat, so I will admit to making a mistake.
Also, I've been assuming that centaurs are vegetarian like their horse half. If you've got extra-long intestines like a horse (necessary for a grass eater), you might as well take advantage of it. But, there's no reason they couldn't be omnivores.
It's a lot more difficult to get hard data on how much a bull's head weighs (if you search for "bull head", you're more likely to find an article about fish because of the bullhead catfish), but minotaurs are also supposed to be as strong as a bull. They would have the strength to support the skull. That's also why most fantasy minotaurs are drawn as large (2.1 to 2.4 meters / 7 to 8 feet), really muscular creatures. But you're right, that much bulk would slow them down.

vegetarian isnt quite good for a fighting creature. thats why all predators mostly eat flesh. Bears tend to eat honey and berries which makes them omnivores but thats the only case im aware of.
The problem is a normal human bonestructure already struggles to keep an overweight person in their feet. 200 kg is already quite damaging for the bones. Having a massive bullskull as stable as it is would be quite unhealthy.
A minotaur would need massive muscles, stronger bones and better joints so that the knees dont only last 20 to 25 years before he's unable to move out of pain.
Once he charges at you and all this mass is moving he would be quite dangerous but manouverability would suck.

Also... not all predators eat meat. The giant panda has the digestive tract of a carnivore, yet spends about 55% of its life eating bamboo. Most people don't usually think of pandas as predators, but it's still a bear, and you do NOT want to get bitten by one! It has one of the highest bite forces of any carnivore, which it needs to crack the bamboo stem. There are some pictures of the damage a panda can do at this link: www.ncbi.nlm.nih.gov/pmc/artic…
(The pictures are very, very, ugly. All three cases required major surgery. You have been warned.) Eating bamboo is not a bad strategy. It would help if the giant panda had longer intestines, which helps extract nutrients from the bamboo. Because it has a short digestive tract, it has to eat a LOT of bamboo. BUT, bamboo grows back every year (some species of bamboo can grow 3 feet a day!) and doesn't run away, so the pandas don't have to expend any energy chasing their prey.
By the way, dogs are also omnivores. You wouldn't want to try to feed them a completely vegetarian diet because it would make them sick. But they *can* get nutrition from plants; in fact, apples, bananas, blueberries, carrots, celery, cucumber, green beans, mango, oranges, and several other fruits and vegetables are perfectly safe for a dog as long as you're careful to remove the seeds and pit. Just be careful, because there are other vegetables that are NOT safe for a dog... cherries, grapes, and onions, for example.

I'm not joking. There were 88 shark attacks last year, but only 5 fatalities. In the same year, more than 100 people were killed being trampled by cows.
And the deadliest animal of all?
Mosquitoes, mostly due to the diseases they can carry. More than 750,000 people die due to infected mosquito bites every year.
Oh, and in regards to the pandas, they've been uprated. They're not "endangered" anymore; they're just "threatened". (Which is still not good, but it's a step up from being on the brink of extinction.)

It's not that we're not "fitting food" for sharks. They could eat us if they wanted to. It's because we're not normally on their menu. They take a test bite and go "I thought that was a seal! That's not a seal!" In other words, we're perfectly edible, but we taste weird. Most people who die from shark attack die because they bleed out from the bite, and the shark probably wouldn't bite humans at all if they had some way other than biting to tell if something is food.
And no, the pandas would not be extinct (yet), but they would be really close... probably within the next few decades. Fortunately for them, they are the national symbol of China, so a lot of resources have gone into breeding programs and protecting the ones that remain (and protecting what's left of their habitat). Same thing nearly happened to OUR national symbol (the bald eagle), except that it was due to DDT being used in pesticides, not due to loss of habitat. Fortunately they recovered on their own once DDT was banned.
