Description Mise en place is a French phrase meaning “everything in place.” It is common practice in professional kitchens for the chefs to prepare the ingredients needed for their shift and to have each in individual containers, ready to use at the sign of a ticket.

In this case, however, I’ve left the mise en place up to chance. Not staged or contrived, but something truer than that. I set the composition and waited for my subjects to fall into place – a completely natural form of mise en place.
