It should come back to you if they cannot find me - either way they won't be able to. Whether it's Sellgraben (don't think we have one in Aachen) or the correct Seilgraben (where my name isn't on the door anymore).

The postal-office mostly works with the Postalcode, and I assume that's correct for I do believe I've send you something before....

Nope, that won't work. They can't just throw it into their mailbox if my name isn't on it. Think of important letters like from the bank or whatever - the person living there would be able to do a lot of shady stuff if they got mail that isn't for them.
So if the postman discovers that the name isn't on the mailbox on that address, they write "couldn't find the addressee" on the envelope and send it back where it came from. I had to re-send letters that came back to me because the addressee couldn't be found (because they moved).
Also it's a house with three or four parties living in it, so how should the mailman know where to throw it in? How is he supposed to know where I used to live?

Here they don't look at the names on the letters, but at the adress and most important the postal code
This because not everyone HAS their name on the mailbox, so there's no way they can send every letter back when there's no name

That's weird, I didn't know about that. Here, especially in the big cities where it's important that the letters are only given to the ones they're supposed to get to, you kinda have to write each name on the mailbox (for example, my flatmate and I have both of our names on our shared mailbox).
This is very important concerning letters from lawyers, the government, or bills in general, because you can be called to court if you don't reply to these. Now, if I moved but the lawyer of the person who wants money from me (just an example, let's say I have lots of debts) sends the letter to my old address, and the postman would just throw it in there, I'd never get it. This means that I'll miss the deadline they give me in that letter, which means they can sue me and ask for even more money.
It's kinda complicated, but here the post is a very important business. I'm not sure how it works when the letter comes from another country. In Germany they'd send it back, but I'm not sure whether they send it back to your place. Hmm ...

Here in the Nl you indeed have the chance that you'll miss a bill or letter if you're moved, but don't tell them your address.
(That also why most people do the regular bills through automatic-incassment)
Though letters from the government are useally send to the right adress, because you have to 'write yourself into the county' (I'm not sure how it's called in english)
The letters from lawyers and such (those who are realy REALly important that it's gone to the right person) are useally brought by an 'process-server'
