Or you could do George Washington. That way you can make him talk about how the whole Executive branch was created and stuff, and have it make a lot more sense than if, say, Benjamin Harrison was talking about it.

Well, how long is the journal going to be?
You'll still be able to talk about presidential issues. Every president has had problems throughout his career that he can talk about.
Though you're not really focusing on his problems, you're focusing on the executive branch.

If you want to make it look old, you can just do what I do:
Give it a yellowing aged look by lightly coloring it with yellow and/or tan colored pencil and shred the edges of the paper a bit.

I did mine on the Bill of Rights. It was a poster.
I made ten squares and copied down the amendments, then put the meanings. Some of the amendments were pretty long, so it took about two or three days, but I wasn't always working on it or anything.
