It probably means vally (dale) man.

It could mean tall man if it was in ancient northern German, which is close to English in many respects.

But not both. I just checked an online map for the distribution of "Thalmann" in Germany - it is spread all over Germany so I can't say for sure. But there are some red areas in the north, to it could mean tall man. Here is the link: www.verwandt.de/karten/absolut…
